Carrot Cake Cupcakes
Carrot cake cupcakes are a healthy choice for all and something that kids will always relish.
Carrot cake consists of carrots that are grated and mixed with batter. During the cooking process the carrots soften and the cake usually has turns out to have a dense and soft texture. The carrots present in them are the main reason for the enhanced flavour, appearance of the cake and the texture.
Carrot Cake Cupcakes ( can prepare 13-14 cupcakes)
• Half a cup of sugar
• baking soda - 3/4 teaspoon
• baking powder- 1 teaspoon
• Salt- 1/2 teaspoon
• Cinnamon- half a teaspoon
• Ground cardamom- 1/2 teaspoon
• large carrot-1
• pineapple, drained and crushed 1 Cup
• coconut flakes- 1 cup
• raisins – 2 handful ( optional)
• nuts - 1/2 Cup
• coconut oil-1/4 Cup
• unsalted butter, 1/4 C that id kept at the room temperature
• eggs- 2
• flour- 1 cup
How To Prepare
Preheat oven to 350°F. Arrange the cupcake tin and grease them. In a bowl, mix all the ingredients except coconut oil, eggs, butter and flour. Add butter and oil and mix well. Keep adding the egg one after the other and stir it till they are mixed well. Mix some flour in it and stir it well till it mixes well. Add the remaining flour and mix it well. Pour this batter in the tin that you have prepared and divide them among liners in an even basis.
This may take 30 minutes for it to bake. Once it is baked cool the mixture. Your carrot cup cake is ready.
