Chicken Marsala Recipe

Chicken Marsala recipe is probably the easiest chicken dish that you can whip up in a matter of minutes and still make it taste so good! The ingredients are simple and easily available.

The technique is really simple and you can even teach your husband to make this recipe. There are many Chicken Marsala recipes available on the internet, but the following recipe is sure to stand out due to its uniqueness and ease of preparation.

Ingredients: (the quantities mentioned are for a dish that serves 2 people)

• Chicken breasts, well pounded -2 nos

• ½ cup mushrooms – sliced. (you can also use other vegetables such as broccoli and carrots to make the dish healthier)

• A pinch of oregano, ground pepper and salt (quantities may vary as per taste)

• 2 tablespoons butter

• Flour for coating – quantity varies depending on the size of the chicken breast. Usually 1/4th cup should be more than sufficient

• 2 tablespoons olive oil

• Cooking wine

• Chicken stock or vegetable stock

Method Of Preparation:

Take a shallow bowl and combine all the spices – oregano, pepper, salt. Remember you can also use paprika and garlic if you like a pungent taste to your chicken. Add flour to the spice mixture in the bowl and dredge the chicken breasts in the flour-spice mixture.

Lightly shake off any excess flour that may be sticking to the chicken breasts or the flour coat will be thick and chewy at the end of preparation. Take an appropriately sized skillet and place over medium heat. Use some oil to coat the skillet to avoid any sticking.

Melt half the quantity of butter in the skillet and place the chicken breasts over the skillet on medium heat. Keep turning the chicken pieces over and cook them until they are golden brown on all sides. Remember to keep turning them over or the breasts will be burnt.

Once they are golden brown in colour, remove and keep aside. Melt some more butter and sauté the mushrooms and other vegetables in the skillet. Add the coking wine cook till the wine has reduced to half its quantity. Add the stock, lower the heat and cook till the sauce thickens. Add the chicken pieces to the sauce, cook for another 5 minutes.

Finally top it off by garnishing with chives or cilantro for that wonderful taste and texture. This is a wonderful dish that can be enjoyed by the whole family.
