Chicken Noodle Soup Recipe

Ingredients: (the quantities mentioned are for 4 cups of soup)

• Chicken stock – 4 cups (the quantity of chicken stock is equal to the number of cups of soup you want to make)

• Noodles - 1.75 ounces – you can use store bought egg noodles or homemade noodles that are cooked al dente

• ½ cup of onion – finely cut

• ½ cup celery – diced

• Garlic powder (you can also use minced garlic or chopped garlic)

• ½ 2 of parsley

• ½ cup chives

• Lemons – to be squeezed before serving

• Salt, pepper as per taste

Method Of Preparation

This recipe for noodle soup has many takers as it can be made in less than 10 minutes. The first step involves taking a pan and placing it over medium heat. Pour in the chicken stock into the pan and bring it to a boil. When the chicken stock comes to a boil; lower the heat immediately.

The stock can be boiled with or without the lid on. Keeping the lid on is recommended as it retains the taste of chicken. The next step is to add the al dente cooked noodles to the stock. Make sure that the noodles are cooked al dente before addition. Al dente implies partially cooked noodles.

The noodles will cook entirely when added to the boiling stock solution. If you add cooked noodles to the stock solution, there is a serious problem of overcooking the noodles. Add the diced onion and celery. Note that you can add other vegetables as per your taste and choice.

The classic chicken noodle soup contains celery and onions only. Finally, remove the pan from the heat; add salt, pepper and other spices as per taste. Garnish with parsley and chives. If you do like a slight sour taste, you can squeeze the juice of half a lemon to make it tangy.
