Citrus Kissed Chicken



Citrus kissed chicken with rice and buttered baby carrots is an awesome meal for your kid which is not only delicious but healthy too. Feeding a kid can sometimes be the most challenging task for the mother. You need to prepare a variety of mouth watering recipes to keep their interest alive.

There are numerous kids friendly easy to cook recipes available that will attract your kids to have their dinner whole heartedly. Try making this dish and see your kids enjoy their dinner time.

Ingredients:

• 1 ½ pounds of chicken breast pieces, that are cut into strips of two inches each.

• Minced garlic 4 cloves

• Half cup of concentrated and frozen orange juice, allow it to thaw.

• Two eggs

• Curry powder 1 teaspoon+ 1 tablespoon

• Light brown sugar 3 tablespoons

• Honey frosted flake cereals that is crumbed five cups

• Unsweetened coconut that is shredded ¾ cup

• Melted butter 3 tablespoons

Method of Preparation

To marinate the chicken add the orange juice along with half of the garlic and keep it in a plastic bag that is sealable and transfer it to the refrigerator. Let it marinate for several hours but keep turning the chicken periodically. In one bowl beat the egg and in another bowl make a mixture of half frosted flakes crumbs, curry powder, coconut, remaining garlic and brown sugar.

Now take out the marinated chicken. Dip the pieces of chicken one by one in the beaten egg. Then place it on the flake mixture. Having done this, add another coating of the remaining frosted flake. Take a baking sheet preferably non stick and place the coated pieces of chicken on it.

Sprinkle melted butter well on the chicken pieces and allow it to bake for twenty minutes in an oven that is preheated to 350 degrees Fahrenheit. Once the chicken is thoroughly cooked serve it with well cooked buttered baby carrot and steamed rice. The amount of ingredients mentioned above will serve four. For large families increase the amount of ingredients proportionately.
